Bacon Corn Chowder
- 1 teaspoon olive oil
- 6 slices bacon, Oscar Mayer precooked
- 1 cup green onion, sliced
- 1 cup whole kernel corn (frozen or canned)
- 15 34 ounces creamed corn
- 2 cups potatoes, diced cooked
- 10 34 ounces cream of chicken soup, healthy request
- 1 12 cups low-fat milk
- 1 cup fat-free half-and-half
- Place olive oil into pan and add onion and cook till lightly browned.
- Add remaining ingredients and dash pepper.
- Heat to boiling; reduce heat and simmer a minute or two.
- Top each serving with crumbled bacon.
- Enjoy.
