Old-Fashioned Beef Stew
- 2 Tbsp. fat
- 2 lb. stew meat
- 1 large onion, sliced
- 1 clove garlic on toothpick (so it can be retrieved)
- 4 c. boiling water
- 1 Tbsp. salt
- 1 Tbsp. lemon juice
- 1 Tbsp. sugar
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. pepper
- 1/2 tsp. paprika
- 1 or 2 bay leaves (remove before serving)
- dash of allspice or cloves
- 6 carrots, sliced
- 6 medium potatoes, cut in 2-inch cubes
- 1/2 c. cold water
- 1/4 c. flour
- Brown meat in fat about 20 minutes.
- Add boiling water and rest of ingredients except carrots, potatoes, 1/2 cup water and 1/4 cup flour.
- Simmer about 2 hours until meat is thoroughly done and tender.
- Add carrots and potatoes.
- Cook until tender.
- Mix cold water and flour.
- Remove bay leaves and garlic.
- Make a well in center of meat and potatoes and pour in water and flour mixture to thicken.
- Cook gently about 5 minutes.
