Beer Rice Recipe
- 1 c. brown rice
- 1 c. beer -- allowed to go flat
- 1 1/4 c. chicken broth
- 1 Tbsp. butter
- 1/4 c. peanuts -- salted, coarsely minced
- 1/2 tsp salt -- optional Freshly grnd black pepper -- to taste
- Preheat oven to 350 degrees F. Place all ingredients in a 2 1/2-qt casserole dish lightly coated with cooking spray or possibly oil.
- Cover and bake till all liquid is absorbed, about 1 1/4 hrs.
- Yield: 4 servings.
