Greek Vegetable Couscous

  1. Combine water and broth; bring to a boil.
  2. Remove from heat; add couscous.
  3. Cover and let stand until liquid is absorbed (about 5 minutes).
  4. Coat skillet with cooking spray; place over medium-high heat.
  5. Add garlic and saute 1 minute.
  6. Add zucchini, tomatoes, and onion.
  7. Saute 2 minutes.
  8. Add garbanzo beans and next 4 ingredients.
  9. Cook until heated.
  10. Top with cheese, olives and parsley.
