Mochi With Strawberry Centers

  1. Combine mochiko,
  2. water
  3. and
  4. sugar in a microwave-safe bowl. Microwave on
  5. Hightor
  6. 4tinutes.
  7. Turn pan and mix. Microwave for another
  8. 4
  9. minutes.
  10. Mix until smooth (adding a couple of spoonfuls of water helps).tprinkle generous amount of katakuri ontork surface (cookie sheet works well).
  11. Place mochi on katakuri,
  12. then
  13. sprinkle
  14. more
  15. on
  16. top, as mochi is flattened. Slice into 3 x 3-inch squares.
  17. Wash, hull and dry strawberries. With
  18. damp hands, wrap tsubushian around strawberries, then
  19. wrap mochi around tsubushian.
  20. Place in cupcake liners.tat within 48 hours.
