Chicken Chow Mein

  1. Debone cooked chicken, cut in small pieces and set aside. Season with salt and pepper to taste.
  2. In large skillet, heat oil and saute onions over medium heat.
  3. Blend in cornstarch, water, soy sauce and black pepper.
  4. Let thicken slightly.
  5. Add bean sprouts, water chestnuts, bamboo shoots, garlic, mushrooms and chicken; simmer on low heat for about 10 minutes.
  6. Add celery; simmer 5 minutes longer.
  7. Celery should be crunchy.
  8. Serve over rice or noodles.
  9. Serves 6 to 8.
