Chicken Chow Mein
- 1 stewing size chicken
- 2 medium onions, chopped
- 2 c. chicken broth
- 1/2 to 1 bottle soy sauce
- 3 Tbsp. cooking oil
- 2 Tbsp. cornstarch
- 1 can bean sprouts
- 1 can water chestnuts
- 1 can bamboo shoots
- 1 clove garlic (optional)
- 2 c. chopped celery
- 1 can mushrooms
- pepper to taste
- 1 can chow mein noodles or hot fluffy rice
- Debone cooked chicken, cut in small pieces and set aside. Season with salt and pepper to taste.
- In large skillet, heat oil and saute onions over medium heat.
- Blend in cornstarch, water, soy sauce and black pepper.
- Let thicken slightly.
- Add bean sprouts, water chestnuts, bamboo shoots, garlic, mushrooms and chicken; simmer on low heat for about 10 minutes.
- Add celery; simmer 5 minutes longer.
- Celery should be crunchy.
- Serve over rice or noodles.
- Serves 6 to 8.
