Pear Salad
- 2 c. drained canned pear halves (no sugar added) plus 1 c. reserved juice
- 1 c. reduced calorie cream cheese, softened
- 1 envelope sugar-free lemon gelatin or lime (4 servings; 8 calories/serving)
- 1 c. reduced calorie whipped topping (8 calories per Tbsp.)
- mint sprigs for garnish (optional)
- cinnamon (optional)
- In medium bowl, mash pears; stir in cream cheese until blended. In small saucepan, bring reserved juice to boil, pour into medium bowl.
- Sprinkle gelatin over hot juice, pour in 1 cup cold water and stir into pear mixture.
- Whisk in whipped topping.
- Spray 6 cup mold with nonstick spray, pour mixture into mold.
- Chill until set about 4 hours.
- To serve, run tip of knife around edge of mold; unmold onto serving plate.
- Garnish with mint, if desired.
- Makes 8 servings.
