Pear Salad

  1. In medium bowl, mash pears; stir in cream cheese until blended. In small saucepan, bring reserved juice to boil, pour into medium bowl.
  2. Sprinkle gelatin over hot juice, pour in 1 cup cold water and stir into pear mixture.
  3. Whisk in whipped topping.
  4. Spray 6 cup mold with nonstick spray, pour mixture into mold.
  5. Chill until set about 4 hours.
  6. To serve, run tip of knife around edge of mold; unmold onto serving plate.
  7. Garnish with mint, if desired.
  8. Makes 8 servings.
