Steak with Brandy Sauce

  1. Brush steaks with olive oil and season as required.
  2. Heat a frying pan or griddle to a high heat.
  3. Cook the steaks in the pan - approx 3 minutes each side for rare, 4 minutes for medium and 5 minutes for well done.
  4. Remove the steaks, cover with foil and leave to rest for 5 minutes whilst you prepare the sauce.
  5. While the steak is resting, add the brandy to the pan to extract the flavours and turn down the heat.
  6. Melt in the butter and cook the garlic over the low heat for 2 minutes.
  7. Add the cream and mustard and simmer over a low heat for 2-3 minutes.
  8. Serve with the steaks with accompanying chips or potatoes and vegetables.
