Steak with Brandy Sauce
- 1 tbsp Olive Oil
- 2 to 4 Steaks
- 4 tbsp Brandy
- 1 clove Garlic
- 1/3 pints Double Cream
- 2 tsp Dijon Mustard
- 30 grams Butter
- Brush steaks with olive oil and season as required.
- Heat a frying pan or griddle to a high heat.
- Cook the steaks in the pan - approx 3 minutes each side for rare, 4 minutes for medium and 5 minutes for well done.
- Remove the steaks, cover with foil and leave to rest for 5 minutes whilst you prepare the sauce.
- While the steak is resting, add the brandy to the pan to extract the flavours and turn down the heat.
- Melt in the butter and cook the garlic over the low heat for 2 minutes.
- Add the cream and mustard and simmer over a low heat for 2-3 minutes.
- Serve with the steaks with accompanying chips or potatoes and vegetables.
