Empire Biscuits
- 2 cup butter
- 1 cup white sugar
- 4 cup flour
- 1 cup jam
- 8 cup confectioners sugar
- 1/2 cup milk
- 1 maraschino cherries
- preheat oven to 350c
- in a large bowl cream together the butter and white sugar until smooth.
- gradually stir in the flour until well blended.
- on a lught floured surface roll the dough on to 1/4 inch thick
- cut into rounds.
- bake for 8-10 min until light golden
- Allow cookies to cool on baking sheet for 5min
- Mix the milk and the confectioners sugar for the icing.
- Reserve.Spread the jam on the biscuits and make a sandwich.
- After that spread the icing on the top of the sandwiches.
- place the cherries semi dry in the middle
