Bow Ties With Asparagus Palmer Recipe

  1. Cook pasta and drain well, reserving 1/3-c. of the cooking water.
  2. Return pasta and reserve water to the cooking pot to keep pasta hot.
  3. Peel the asparagus and cut diagonally into 1-inch pcs.
  4. Heat extra virgin olive oil in large saute/fry pan over medium heat.
  5. Add in bacon and garlic and saute/fry for about 5 min till bacon is beginning to crisp.
  6. Add in asparagus and red pepper; saute/fry for an additional 5 min or possibly till asparagus is crisp-tender.
  7. Remove from heat.
  8. Toss vegetables into warm pasta; then toss in the parsley and salt and pepper to taste.
  9. Serve warm with cheese sprinkled over the top if you like.
