Bow Ties With Asparagus Palmer Recipe
- 1 1/2 lb bowtie pasta
- 1/3 c. extra virgin olive oil
- 1 lb bacon diced
- 1 Tbsp. chopped garlic
- 1/2 lb asparagus see directions
- 1/4 c. finely diced red bell pepper
- 1 Tbsp. chopped parsley Salt and freshly grnd pepper to taste
- 1/2 c. grated Romano cheese optional
- Cook pasta and drain well, reserving 1/3-c. of the cooking water.
- Return pasta and reserve water to the cooking pot to keep pasta hot.
- Peel the asparagus and cut diagonally into 1-inch pcs.
- Heat extra virgin olive oil in large saute/fry pan over medium heat.
- Add in bacon and garlic and saute/fry for about 5 min till bacon is beginning to crisp.
- Add in asparagus and red pepper; saute/fry for an additional 5 min or possibly till asparagus is crisp-tender.
- Remove from heat.
- Toss vegetables into warm pasta; then toss in the parsley and salt and pepper to taste.
- Serve warm with cheese sprinkled over the top if you like.
