Rhubarb Ricotta Bread

  1. In large bowl, combine flour, sugar, baking powder, soda and salt.
  2. In medium bowl beat together melted margarine, Ricotta, milk, eggs and extract.
  3. Add Ricotta mixture to dry ingredients; stir just until blended.
  4. Fold in rhubarb and nuts.
  5. Scoop batter into greased and floured 9 x 5 loaf pan.
  6. Bake at 350u0b0 about 50 minutes.
  7. Cool in pan on wire rack 10 minutes.
  8. Remove from pan and cool completely.
  9. Sprinkle with confectioners sugar.
  10. Store in an air tight container.
