Skinny Coconut Shrimp

  2. Preheat oven to 425 degrees F. Line 2 baking sheets with aluminum foil.

  4. In a large bowl, toss the shrimp with the beaten egg.

  6. On a large plate, mix the coconut flakes and panko.
  7. 4.
  8. Press shrimp (one at a time) in the coconut/panko mixture until well coated.
  9. Place on the baking sheet.
  10. 5.
  11. Sprinkle shrimp with cayenne pepper, salt and pepper.
  12. 6.
  13. Bake for 6 minutes.
  14. If not golden enough, broil for additional 1-2 minutes.
