Fiesta Lasagne
- 4 c. chopped, cooked chicken
- 3 (14 1/2 oz.) cans S&W salsa (ready cut)
- 1/8 c. chopped cilantro
- 16 oz. uncooked lasagne
- 1 (15 oz.) container Ricotta cheese
- 2 eggs
- 1 (2 1/4 oz.) can sliced olives
- 1 (4 oz.) can diced green chilies
- 2 c. shredded Mozzarella cheese
- In a large bowl, add chicken, salsa and cilantro.
- Spread 1/3 of this mixture on bottom of 9 x 13-inch baking dish.
- Arrange 1/2 of lasagne on top of sauce.
- Combine Ricotta cheese, eggs, olives, green chilies and 1 cup Mozzarella cheese.
- Spoon 1/2 of Ricotta cheese mixture over lasagne.
- Repeat, ending with sauce.
- Cover tightly with plastic wrap and microwave on High for 25 to 30 minutes, turning 1/4 way every 5 minutes.
- Remove from oven and uncover; sprinkle remaining cheese over top.
- Let stand 5 to 10 minutes as cheese melts.
