Simple Microbiotic Okara Crackers
- 80 grams Whole wheat flour (or super fine, all-purpose, bread flour)
- 40 grams Dried okara
- 1/2 tsp Natural salt
- 1 Coarsely ground pepper
- 2 tbsp Olive oil
- 4 tbsp Water
- 1 Dried herbs, sesame if desired
- If using fresh okara, cook out the moisture it in the microwave beforehand while carefully keeping an eye on it.
- Stop to mix it from time to time.
- Add the dry ingredients to a bowl and mix with a rubber spatula.
- Add the water and olive oil and mix well, being careful not to knead.
- Thinly spread out the dough over a baking pan (using a plastic bag over your hands is convenient) and cut into desired sizes.
- Pierce the dough with a fork to ventilate.
- Bake in the oven at 180C for 20-25 minutes and they're complete.
