Low Cholesterol Apple And Oat Bran Muffins
- 1/4 tsp. baking soda
- 1 1/4 c. whole wheat flour
- 1 c. oat bran
- 1/3 c. brown sugar
- 2 1/2 tsp. baking powder
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1 c. buttermilk
- 2 egg whites
- 2 Tbsp. oil
- 3/4 c. shredded and peeled apple
- nonstick coating
- In a medium bowl, stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon.
- Set aside. In a small bowl, combine buttermilk, egg whites and oil.
- Add to dry ingredients; stir just until moist.
- Stir in apple.
- Store batter tightly covered in refrigerator for 5 days.
- To bake, spray muffin cups with nonstick spray coating.
- Spoon about 1/4 cup batter into each muffin cup.
- Bake 375u0b0 for 18 to 20 minutes or until toothpick comes out clean.
- Make 12 muffins. 124 calories per muffin.
