Make-Ahead Ranch Mashed Potatoes

  1. Combine potatoes, water and salt in 2-quart saucepan.
  2. Cook over high heat until water comes to a boil.
  3. Reduce heat to low.
  4. Cover; cook 15-20 minutes or until potatoes are fork tender.
  5. Drain.
  6. Mash potatoes with potato masher or electric mixer, gradually adding 2/3 cup milk.
  7. Stir in sour cream and dressing mix.
  8. Spread potatoes evenly into 1 1/2-quart casserole.
  9. Pour remaining milk over potatoes.
  10. Do not mix.
  11. Dot with butter.
  12. Cover; refrigerate 4 hours or overnight.
  13. Heat oven to 400F.
  14. Bake uncovered 20 minutes; stir.
  15. Continue baking 20-30 minutes or until heated through.
  16. Variation: To prepare 12 servings, double all ingredients except use 1 1/4 cups milk.
  17. Cook potatoes as directed above.
  18. Mash potatoes with potato masher or electric mixer, gradually adding 1 cup milk.
  19. Stir in sour cream and dressing mix.
  20. Spread potatoes evenly in 3-quart casserole.
  21. Pour remaining milk over potatoes.
  22. Continue as directed above.
