Grilled Watermelon W/Chevre, Pepitas & Cilantro Vinaigrette

  1. Whisk together the cilantro-lime vinaigrette in a non-reactive bowl and set aside.
  2. Or, use an immersion blender.
  3. Cut the watermelon into 3/4" thick triangular slices (like a small slice of pizza.
  4. ).
  5. Use a pastry brush to lightly brush olive oil on each side of the watermelon slices.
  6. Grill the watermelon slices on a hot grill for about 2-3 minutes each side or until there are grill marks but the watermelon is still firm and *NOT* mushy!
  7. Arrange the slices on a platter.
  8. Top each watermelon slice with about 1 tablespoon goat cheese; diced white onion, pepitas and a drizzle of the cilantro vinaigrette.
  9. Garnish with a little bit of fresh cilantro.
  10. Serve immediately.
