Potato-Sausage Casserole
- 6 to 8 medium to large potatoes
- 1 to 2 lb. bulk or link pork sausage
- 3 Tbsp. sausage drippings
- 9 Tbsp. flour, divided
- 1/2 c. water
- 1/2 tsp. ground sage
- 1/8 tsp. thyme
- salt and pepper to taste
- 2 to 3 c. milk
- Boil potatoes.
- Pan-fry sausage.
- Chop potatoes and cut sausage into pieces, except 6 to 8 links, reserved as garnish.
- Put 3 tablespoons of sausage drippings into large frying pan.
- Add 3 tablespoons flour and brown lightly.
- Stir in 2 to 3 cups milk and bring to simmer.
- Mix 6 tablespoons flour with 1/2 cup water and shake well.
- Add this to the milk mixture and stir until desired thickness.
- Mix in seasonings.
- Place a layer of potatoes and sausage in a 3-quart casserole dish.
- Pour some of the gravy over this and continue layers until casserole is filled 1 1/2-inches from the top.
- Garnish with whole sausage.
- Bake at 350u0b0 for 45 minutes, covered or uncovered, as you prefer.
- Serves 4 to 6.
