Homemade Hummus with Zaatar and Sweet Paprika

  1. Reserve about 1/3 cup chickpea liquid and 1/4 cup chickpeas for garnish.
  2. Put remaining drained chickpeas, tahini, oil, garlic, salt, pepper, and lemon juice in a blender or food processor (a blender will give you a much smoother hummus).
  3. Begin to blend and add the chickpea liquid as needed to create a smooth puree.
  4. Taste and adjust to your liking.
  5. Transfer to a bowl and drizzle with olive oil.
  6. Garnish with zaatar, paprika, parsley, and reserved chickpeas.
  7. Makes about 2 cups.
  8. Note: If you want to create your own zaatar, simply mix 1/4 cup toasted sesame seeds, 2 tablespoons dried thyme, 2 tablespoons sumac, kosher salt and cracked black pepper.
