Homemade Hummus with Zaatar and Sweet Paprika
- 2 cups Chickpeas, Drained (Reserve 1/3 Cup Liquid)
- 1/2 cups Tahini
- 1/4 cups Extra Virgin Olive Oil
- 1 clove Garlic, Roughly Chopped
- 1/2 teaspoons Kosher Salt
- Cracked Black Pepper, To Taste
- 1 Large Lemon, Juiced
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Tablespoon Za'atar
- 1 Tablespoon Sweet Paprika
- Chopped Fresh Parsley
- Reserve about 1/3 cup chickpea liquid and 1/4 cup chickpeas for garnish.
- Put remaining drained chickpeas, tahini, oil, garlic, salt, pepper, and lemon juice in a blender or food processor (a blender will give you a much smoother hummus).
- Begin to blend and add the chickpea liquid as needed to create a smooth puree.
- Taste and adjust to your liking.
- Transfer to a bowl and drizzle with olive oil.
- Garnish with zaatar, paprika, parsley, and reserved chickpeas.
- Makes about 2 cups.
- Note: If you want to create your own zaatar, simply mix 1/4 cup toasted sesame seeds, 2 tablespoons dried thyme, 2 tablespoons sumac, kosher salt and cracked black pepper.
