Festive Rice

  1. In a medium nonstick saucepan, bring broth to boil.
  2. Add rice. Reduce heat to medium-low; cover and simmer 10 minutes.
  3. Stir in 4 tablespoons Molly McButter and all vegetables.
  4. Cover, continue cooking 10 minutes.
  5. Remove from heat and let stand 5 minutes or until water is absorbed.
  6. Sprinkle with remaining Molly McButter and pepper to taste.
  7. Fluff with fork and serve.
  8. Makes 8 servings.
