Tex-Mex Casserole
- 1/2 lb. lean ground beef King Sooper's 1 lb For $3.99 thru 02/09
- 1-1/2 cups cooked dried black beans
- 1 can (14.5 oz.) diced tomatoes, drained King Sooper's 1 lb For $0.99 thru 02/09
- 2 Tbsp. chili powder
- 1 tsp. garlic powder
- 2 cups water
- 1/2 cup creamy wheat (enriched farina) hot cereal (1-minute, 2-1/2-minute or 10-minute cook time), uncooked
- 1 can (4 oz.) chopped green chiles, undrained
- 3/4 cup shredded KRAFT Cheddar Cheese, divided
- 2 eggs, lightly beaten
- Preheat oven to 350F.
- Brown meat in large skillet; drain.
- Remove from heat.
- Add beans, tomatoes, chili powder and garlic powder; mix well.
- Spread into 8- or 9-inch square baking dish.
- Bring water to boil in medium saucepan.
- Gradually add cereal, stirring constantly with wire whisk until well blended.
- Cook 1 to 3 min.
- or until thickened, stirring constantly.
- Remove from heat; cool 5 min.
- Add chilies, 1/2 cup of the cheese and the eggs; mix well.
- Spread evenly over meat mixture.
- Bake 25 min.
- or until heated through.
- Sprinkle with remaining 1/4 cup cheese.
- Bake an additional 5 min.
- or until cheese is melted.
