Mini Banana Bread Loaf
- 1/3 c. shortening
- 2/3 c. sugar
- 2 eggs, slightly beaten
- 1 3/4 c. sifted all-purpose flour
- 2 3/4 tsp. double-acting baking powder
- 1/2 tsp. salt
- 1 c. mashed ripe banana (2 to 3 bananas)
- Beat shortening until creamy and glossy or 2 minutes at medium speed on electric mixer.
- Gradually add sugar, beating until light and fluffy after each addition.
- Add eggs and beat until thick and pale lemon in color.
- Sift dry ingredients; add alternately with bananas.
- Blend thoroughly after each addition.
- Grease bottom only of 4 1/2 x 8 1/2 x 3-inch loaf pan.
- Put batter in pan.
- Bake in 350u0b0 oven for 60 to 70 minutes or until tester inserted comes out clean and dry.
- Let bread cool in pans for 10 to 20 minutes, turning onto racks to cool completely.
