Fried Rice With Shrimp

  1. In small mixing bowl, combine beaten eggs, soy sauce, dry sherry and pepper; set aside.
  2. Preheat wok or large skillet over high heat; add cooking oil.
  3. Stir-fry garlic and ginger root in hot oil for 30 seconds.
  4. Add chopped onion; stir-fry about 1 minute or until crisp-tender.
  5. Stir in cooked rice, shrimp and peas.
  6. Cook, stirring frequently, for 6 to 8 minutes.
  7. While stirring constantly, drizzle egg mixture over rice.
  8. Cook, stirring constantly, until eggs are set.
  9. Makes 4 to 6 servings.
