Fried Rice With Shrimp
- 2 beaten eggs
- 1/3 c. soy sauce
- 2 Tbsp. dry sherry
- 1/8 tsp. pepper
- 2 Tbsp. cooking oil
- 1 clove garlic, minced
- 1 tsp. grated ginger root
- 1/4 c. chopped onion
- 3 c. cooked rice
- 1 c. cooked shrimp, halved lengthwise
- 1 c. cooked or canned peas
- In small mixing bowl, combine beaten eggs, soy sauce, dry sherry and pepper; set aside.
- Preheat wok or large skillet over high heat; add cooking oil.
- Stir-fry garlic and ginger root in hot oil for 30 seconds.
- Add chopped onion; stir-fry about 1 minute or until crisp-tender.
- Stir in cooked rice, shrimp and peas.
- Cook, stirring frequently, for 6 to 8 minutes.
- While stirring constantly, drizzle egg mixture over rice.
- Cook, stirring constantly, until eggs are set.
- Makes 4 to 6 servings.
