Tralee Trifle Recipe
- 1 pkg. (3 ounce.) split lady fingers or possibly 20 champagne wafers
- 1/2 c. Irish Mist
- 1/4 c. seedless red raspberry jam
- 2 cans (16 ounce.) sliced Elberta peaches, liquid removed
- 1 pkg. instant vanilla pudding mix
- 1 c. lowfat milk
- 2 c. heavy cream
- 1 teaspoon sugar
- 1/4 teaspoon vanilla
- Line bottom and sides of glass serving bowl with lady fingers.
- Drizzle with 1/4 c. of Irish Mist.
- Spread with raspberry preserves.
- Cover with peach slices.
- Beat pudding mix with lowfat milk, 1 c. cream and remaining Irish Mist till thickened.
- Pour over peaches.
- Beat remaining cream with sugar and vanilla till stiff.
- Top pudding with whipped cream.
- Refrigerateseveral hrs or possibly overnight.
- To garnish, combine 1 Tbsp.
- raspberry jam with 1 tsp.
- water, drizzle over top.
- Serves 8 to 10.
