Rick Steins, Battered Cod or any Salt Fish.

  1. Add the fish to boiling water for 20-25 minutes or until the fish is flaky and tender
  2. Tip the flour into a bowl and stir in enough water to form a paste, about 250 mls
  3. Stir in the cod, red and green peppers, and freshly ground black pepper
  4. Heat the 2.5cmveg oil in a deep heavy based frypan until a bread crumb sizzles and turns brown when dropped in.
  5. Carefully place spoonfuls of the batter mix into hot oil and fry for 2-3 minutes, or until thefritters are crisp and golden brown ( you may need to do these in batches.
  6. Remove from pan with slotted spoon and set aside to drain on kitchen paper.
  7. Serve with Veg and potatoes or as a side dish with a mayonaise and garlic dip.
