Rick Steins, Battered Cod or any Salt Fish.
- 100 grams Self raising flour
- 125 grams Cod or other salt fish
- 1/4 red pepper diced
- 1/4 green pepper diced
- 1/4 of onione finely diced
- 1/2 Scots bonnet chilli, or seeded and finely chopped or half of green chilli for a milder taste.
- 1/2 freshly ground blac pepper
- 1 Veg oil for shallow frying
- Add the fish to boiling water for 20-25 minutes or until the fish is flaky and tender
- Tip the flour into a bowl and stir in enough water to form a paste, about 250 mls
- Stir in the cod, red and green peppers, and freshly ground black pepper
- Heat the 2.5cmveg oil in a deep heavy based frypan until a bread crumb sizzles and turns brown when dropped in.
- Carefully place spoonfuls of the batter mix into hot oil and fry for 2-3 minutes, or until thefritters are crisp and golden brown ( you may need to do these in batches.
- Remove from pan with slotted spoon and set aside to drain on kitchen paper.
- Serve with Veg and potatoes or as a side dish with a mayonaise and garlic dip.
