Zucchini Parmesan Casserole

  1. Saute ground beef and onion in salad oil until meat is brown and crumbly.
  2. Add Ro-Tel, tomato sauce, tomato paste and green pepper.
  3. Simmer for 10 minutes, stirring occasionally.
  4. Blend in Cheddar cheese, oregano, salt, pepper and garlic salt.
  5. Add zucchini.
  6. Simmer another 10 minutes.
  7. Put into an ungreased shallow 3-quart casserole and sprinkle with Parmesan cheese.
  8. Bake at 350u0b0
  9. for 45 minutes.
  10. Makes 6 to 8 servings.
