Spinach Madeleine
- 2 pkg. frozen chopped spinach
- 4 Tbsp. butter
- 2 Tbsp. flour
- 2 Tbsp. chopped onion
- 1/2 cup evaporated milk
- 1/2 cup vegetable liquor
- 1/2 tsp. black pepper
- 3/4 tsp. celery salt
- 3/4 tsp. garlic salt
- salt to taste
- 6-oz. roll jalapeno cheese
- 1 tsp. Worcestershire sauce
- hot sauce to taste
- Cook spinach according to package directions; drain and reserve liquid.
- Melt butter and add flour, stirring until smooth. Add onion and cook until soft.
- Add liquid and stir to avoid lumps.
- Cook until smooth and until melted.
- Combine with spinach. Place in casserole and top with buttered crumbs.
- This freezes well.
- Serves 6.
