French Bistro Cake
- 1 1/2 c. powdered sugar
- 1 c. flour
- 12 egg whites
- 1 1/2 tsp. cream of tartar
- 1 tsp. vanilla
- 1 tsp. almond extract
- 1 c. sugar
- 8 oz. whipping cream
- 3 kiwi
- 2 c. strawberries
- 1 c. raspberries
- 1 c. blueberries
- 1 Tbsp. sugar
- 1/2 tsp. vanilla
- Sift powdered sugar and flour together.
- Beat egg whites, cream of tartar, vanilla and almond until peaks form.
- Gradually add sugar.
- Continue beating until stiff peaks form.
- Fold in flour mixture slowly.
- Spoon into two 9-inch round cake pans. Bake at 350u0b0 for 30 to 40 minutes.
- Beat whipping cream, sugar and vanilla until stiff peaks form.
- (Chill bowl, whipping cream and beaters first.)
- Place 1 cake layer on plate.
- Spread top with half cream and half of fruit.
- Place next layer on top and spread with remaining cream, then decorate with remaining fruit. Refrigerate until served.
