Roasted Beets

  1. Preheat oven to 400F Place beets and shallots on a large sheet of aluminum foil and fold the edges together to seal.
  2. Bake for 1 hour or until beets are tender.
  3. Remove from oven and cool.
  4. Combine remaining ingredients and set aside,.
  5. Remove skins from beets, cut into chunks, and drizzle with vinegar mixture.
  6. Toss well and serve.
