Roasted Beets
- 2 lbs fresh beets, washed and trimmed
- 12 lb shallot, peeled
- 1 tablespoon vinegar
- 1 tablespoon olive oil
- 12 teaspoon salt
- 12 teaspoon pepper
- Preheat oven to 400F Place beets and shallots on a large sheet of aluminum foil and fold the edges together to seal.
- Bake for 1 hour or until beets are tender.
- Remove from oven and cool.
- Combine remaining ingredients and set aside,.
- Remove skins from beets, cut into chunks, and drizzle with vinegar mixture.
- Toss well and serve.
