Tuna Doodle Melts Recipe
- 1 (12 1/2 ounce.) can tuna, liquid removed
- 1/3 c. minced celery
- 3 tbsp. minced onion
- 1/2 c. minced pimento olives (optional)
- 1/2 c. mayonnaise
- Pepper to taste
- 6 English muffins, split
- 12 slices cheese
- Place tuna in bowl and break up into small chunks with fork.
- Add in celery, onion and optional olives.
- Stir in mayonnaise and mix well to combine.
- Season with pepper to taste.
- Lightly toast English muffins under broiler.
- Divide tuna mix among 12 muffin halves and broil till warm and bubbly.
- Add in cheese slices the last minute.
- May be heated in microwave.
