Creamed Asparagus Soup Recipe
- 3/4 pound asparagus, simmered till tender in 2 c. water
- 3 tbsp. butter
- 1/4 c. chopped onion
- 3 tbsp. flour
- 1 can chicken broth (15 ounce.)
- 1 c. lowfat milk
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- Pour asparagus and liquid into blender and whirl till pureed.
- Heat butter in heavy saucepan, add in onion and saute/fry till tender.
- Stir in flour.
- Add in pureed asparagus, chicken broth, lowfat milk, paprika and salt.
- Cook, stirring constantly, till thickened.
- Serves 6.
