Summer Fruit Slice
- base
- 1 1/2 cups sweet biscuit crumbs
- 1/3 tablespoons shredded coconut, toasted
- 80g butter, melted
- Filling
- 750g block PHILADELPHIA Cream Cheese, softened
- 2/3 cup caster sugar
- 250mls pineapple juice
- 3 eggs, lightly beaten
- 2 tablespoons coconut rum essence
- 1 teaspoon grated lemon rind
- Garnish
- 500g selection fresh fruit, mango, kiwi fruit, apples, peaches, cherries - cut into serving size pieces Whole Foods 2 ea For $4.00 thru 02/09
- Combine biscuit crumbs, coconut and butter, press into the base of a lined 30 x 20cm slab tin.
- Chill.
- Beat Philly* for 2 minutes or until smooth.
- Add sugar, juice, eggs, essence and rind, continue beating until smooth.
- Pour onto prepared crumb crust and bake at 160C fan forced for 30-40 minutes, or until set.
- Allow to cool completely in the oven.
- Arrange the fruit over the top of the slice, and serve.
