Summer Fruit Slice

  1. Combine biscuit crumbs, coconut and butter, press into the base of a lined 30 x 20cm slab tin.
  2. Chill.
  3. Beat Philly* for 2 minutes or until smooth.
  4. Add sugar, juice, eggs, essence and rind, continue beating until smooth.
  5. Pour onto prepared crumb crust and bake at 160C fan forced for 30-40 minutes, or until set.
  6. Allow to cool completely in the oven.
  7. Arrange the fruit over the top of the slice, and serve.
