Pork Chops with Nutty Apple Stuffing

  1. Cook and stir red peppers and half of the onions in large nonstick skillet on medium-high heat until crisp-tender.
  2. Season chops with salt and black pepper.
  3. Add to vegetables in skillet; cook 5 to 6 min.
  4. on each side or until chops are golden brown on both sides.
  5. Stir in the broth; cover.
  6. Reduce heat to low; simmer 10 to 15 min.
  7. or until chops are cooked through.
  8. Meanwhile, melt margarine in medium saucepan on medium heat.
  9. Add remaining onions and the apples; cook 2 to 3 min.
  10. or until tender, stirring occasionally.
  11. Add the water; bring to boil.
  12. Stir in stuffing mix.
  13. Remove from heat; stir until well blended.
  14. Gently stir in the trail mix.
  15. Remove chops, onions and peppers from skillet with a slotted spoon; place on large serving platter.
  16. Top with the stuffing mixture.
