Pork Escalopes With Homemade Coleslaw

  1. Heat the oil in a frying pan; add the garlic and cumin.
  2. Cook for 2 minutes.
  3. Shred the cabbage, slice the onion, grate the carrot; put in a bowl.
  4. Add the mayo and yoghurt, stir in the garlic and cumin.
  5. Season, mix, and set aside.
  6. Place each steak between 2 sheets of clingfilm; bash with a rolling pin.
  7. Put the egg and breadcrumbs on 2 plates.
  8. Dip the steak in the egg, then coat in crumbs.
  9. Heat the oil in a frying pan; cook the pork for 4 minutes each side.
  10. Add the parsley; serve with coleslaw and bread.
