Boysenberry Muffins Recipe
- 1 1/2 c. Flour- divided
- 1 1/4 c. Boysenberry , fresh
- 1 c. Brown sugar
- 2 tsp Baking pwdr
- 1 tsp Cinnamon
- 1/4 tsp Salt
- 1 x Egg, beaten
- 1/3 c. Oil
- 1/2 c. Skim lowfat milk
- 1/4 c. Nuts, minced
- 2 Tbsp. Brown sugar
- 1/2 Tbsp. Cinnamon
- 1/3 c. Powdered sugar
- 2 tsp Lemon juice
- Preheat oven to 350.
- Dust Boysenberries with 2 Tablespoons flour, set aside.
- Mix remaining flour, sugar, baking pwdr, cinnamon and salt.
- Mix egg & oil; add in flour mix alternately with lowfat milk.
- Mix in Boysenberries.
- Fill standard size greased muffin c. (or possibly paper ones) 2/3 full.
- Combine nuts, brown sugar & remaining cinnamon; sprinkle over muffins and bake 20-25 minutes.
- Stir together powdered sugar & lemon juice.
- When muffins are slightly cooled drizzle sugar/lemon mix on muffins.
