Wild Turkey In The Straw

  1. Shake turkey pieces in a mixture of flour, salt and pepper in a plastic bag to coat evenly.
  2. Brown turkey pieces in hot oil in a large skillet. Remove and reserve.
  3. Pour off all but 2 tablespoons of the pan drippings. Saute onion and garlic until soft; stir in chicken broth and lemon juice until well blended. Return turkey to skillet. Baste with part of the sauce.
  4. Cover skillet. Lower heat and simmer 30 minutes or until turkey is tender when pierced with a two-tined fork.
  5. Line a heated serving platter with "Straw" and arrange turkey pieces on top. Arrange lemon slices and ripe olives on turkey. Cover with foil and keep hot while preparing sauce.
