Cranberry-Pear Marmalade
- 1 large navel orange
- 2 c. cranberries
- 1 small red grapefruit
- 1 1/2 c. water
- 1 1/2 c. sugar
- 1 1/2 c. light corn syrup
- 2 c. Bartlett pears
- Cut orange into 8 wedges.
- Remove pulp and dice; discard any seeds.
- Remove thick white pith from peel; discard.
- Cut peel into thin julienne strips for 1/2 cup.
- Place peel in a saucepan; cover with cold water.
- Bring to a boil and simmer 5 minutes; drain.
- Repeat three more times, covering with fresh water.
- In a saucepan, mix orange peel, cranberries, grapefruit, orange pulp, and the water; bring to a boil.
- Reduce heat to medium; boil gently 15 minutes.
- Add sugar and corn syrup; return to a boil.
- Cook over medium heat 45 minutes, stirring several times until thickened and reduced to about 4 cups.
- Remove from heat; stir in pears.
- Cool to room temperature; refrigerate.
