Avocado and Grapefruit Salad

  1. With a sharp knife, peel the grapefruit down to the flesh, removing all the rind and pith.
  2. Cut the sections free, slicing carefully along the partitioning membranes, and set aside.
  3. Squeeze the juice from the membranes in a small bowl.
  4. Measure 2 1/2 tablespoons of the juice into a small bowl.
  5. Add the vinegar into the juice, and season with salt and pepper.
  6. Stir in the oil.
  7. Taste, and adjust the vinegar and salt to taste.
  8. Peel the avocado halves and cut them into 1/4 inch slices.
  9. Sprinkle lightly with salt.
  10. Place the grapefruit sections and avocado slices alternately on a serving plate, and spoon the vinaigrette over.
  11. Garnish with chervil.
  12. Serve and enjoy!
