Indian Rice Pilaf

  1. Place oil in Dutch oven, add mustard seeds.
  2. Fry until seeds pop.
  3. Add the ginger, garlic and scallions, stirring, and cook for about 1 minute.
  4. Add the mushrooms, and cook for about 2 minutes.
  5. Add all the other vegetables and fry on medium heat for about 5 minutes, with cover on pan.
  6. Add turmeric.
  7. Wash and dry rice.
  8. Add rice to vegetables and fry for a minute.
  9. Do not brown.
  10. Add curry powder, salt and water.
  11. Cover and bake at 350F (180C) for 20 to 40 minutes, depending on what kind of rice you are using.
