Airmail

• 1 1/2 oz. golden rum
• 3/4 oz. fresh lime juice
• 1 oz. honey
• ice cubes
• 4 oz. Champagne, prosecco, cava, or any dry sparkling wine
• Angostura Bitters
• Mint leaf

1. Combine rum, lime juice, honey water, and ice cubes in a cocktail shaker; shake well.
2. Strain into a glass and top with sparkling wine.
3. Carefully shake 3 to 4 drops of bitters on the surface of the drink.
4. Garnish by dragging mint leaf through bitters to create a design, then lay mint leaf on top.
