Sig's Tomato Cake with Cinnamon Sugar Drizzle

  1. Drop tomatoes into boiling water and blanch, peel ,seed and chop finely or use can of choppes tomatoes but drain very well
  2. mix all dry ingredients,.
  3. in separate bowl mix all wet ingredients
  4. then mix wet with dry , very gently , do not beat or over stir
  5. grease a round 9 1/2 inch tin
  6. add cake miz to tin and gently level out .
  7. sprinkle with a little sugar and,cinnamon.
  8. The cake is moist and sweet .
  9. Bake at 190 C on middle shelf for about 30 minutes or until skewer comes out clean,
  10. cut two slices of tomatoes and rub dark brown sugar into it ,sprinkle with a little cinnamon.
  11. leave to soak for baking time , this will make a sugary syrup
  12. just before serving,sprinkle with a dusting of edible gold dust
