Swedish Apple Cake
- 5 baking apples
- 5 Tbsp. sugar
- 2 tsp. cinnamon
- 3 c. flour
- 2 1/2 c. sugar
- 1/2 tsp. salt
- 4 eggs
- 1 c. oil
- 2 tsp. vanilla
- 1/3 c. orange juice
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- confectioners sugar
- Slice, core and thinly slice apples.
- Mix together the apples, 5 tablespoons of sugar and cinnamon; set aside.
- In another bowl, mix remaining ingredients and beat for 3 minutes.
- Mixture is very thick.
- Grease and flour a 10-inch tube or Bundt pan.
- Alternate in pan the apple mixture and batter, starting and finishing with batter.
- Bake 1 1/2 to 1 3/4 hours at 350u0b0.
- Sprinkle confectioners sugar on cool cake.
