Tuna With Curried Almond Rice
- 2 (7 oz.) cans tuna, drained
- 3 c. hot cooked rice
- 1 c. blanched almonds, slivered or chopped
- 1/2 tsp. curry or to taste
- 8 Tbsp. margarine
- 2 medium tomatoes, peeled and chopped
- 1 clove garlic, minced
- 1 tsp. Worcestershire sauce
- Tabasco sauce to taste
- 6 Tbsp. flour
- 3 c. milk
- 1 tsp. salt
- 4 peppercorns, crushed
- paprika
- Melt 6 tablespoons of the margarine.
- Add tomatoes, garlic, Worcestershire sauce, Tabasco sauce, salt and pepper.
- Simmer, covered, for five (5) minutes.
- Add flour and stir until blended. Add milk and simmer until thickened, stirring constantly.
- Add tuna.
- Cover and simmer 10 minutes.
