Whole Wheat Health Bread
- 4 1/2 c. unbleached flour
- 2 c. whole wheat flour
- 1 c. cracked wheat
- 1 c. uncooked oats
- 1/2 c. wheat germ
- 1 c. sunflower seeds
- 2 pkg. dry yeast
- 2 tsp. salt
- 2 1/2 c. water (120~)
- 1 1/2 c. cottage cheese
- 1/4 c. sorghum
- 1/4 c. honey
- 2 Tbsp. vegetable oil
- Mix flour, cracked wheat and oats.
- Combine 3 cups flour mixture, wheat germ, sunflower seeds, yeast and salt.
- Mix water (120u0b0), cottage cheese, molasses, honey and oil.
- Add to 3 cups of flour mixture.
- Beat 3 minutes with electric mixer.
- Stir in rest of flour.
- Rest 10 minutes.
- Knead 10 minutes.
- Place in oiled bowl, covered.
- Let rise for 1 hour.
- Shape into 3 or 4 loaves. Let rise.
- Bake at 375u0b0 for 35 minutes.
