Pepe Crostini Arrosto (Roasted Pepper Crostini)

  2. In a small mixing bowl, combine the olive oil and minced garlic.
  3. Cover and set aside to allow the flavours to merge, about 1/2 hour.

  5. Place roasted peppers on a shallow platter.
  6. Pour the olive oil and minced garlic mix over them along with a few grindings of black pepper and a sprinkle of some of the Kosher salt over the peppers.
  7. Cover and set aside to marinate for about 1 hour.

  9. Meanwhile, place the bread slices on a baking sheet and toast in a pre-heated 350 degrees F oven for about 10 minutes until crisp and golden.
  10. 4.
  11. To serve, place a slice of mozzarella (or some of the shredded mozzarella), 1 slice of roasted pepper (including some of the garlic), and some chiffonaded basil leaf on each crostini (the slices of toasted French bread) and place on a serving platter.
