Pepe Crostini Arrosto (Roasted Pepper Crostini)
- 1/2 cups Extra Virgin Olive Oil
- 3 cloves Large Garlic Cloves, Crushed And Minced
- 24 slices Roasted Red Peppers (See My Recipe), Each Roasted Pepper Cut To Fit The Top Of A Crostini
- Freshly Ground Black Pepper, To Taste
- Coarse Kosher Or Sea Salt (to Taste)
- 24 slices French Bread, 1/2" Slices
- 24 slices Fresh Mozzarella (1/4" Thick) Or Shredded Mozzarella
- 24 whole Large Fresh Italian Basil

- In a small mixing bowl, combine the olive oil and minced garlic.
- Cover and set aside to allow the flavours to merge, about 1/2 hour.
- 2.
- Place roasted peppers on a shallow platter.
- Pour the olive oil and minced garlic mix over them along with a few grindings of black pepper and a sprinkle of some of the Kosher salt over the peppers.
- Cover and set aside to marinate for about 1 hour.

- Meanwhile, place the bread slices on a baking sheet and toast in a pre-heated 350 degrees F oven for about 10 minutes until crisp and golden.
- 4.
- To serve, place a slice of mozzarella (or some of the shredded mozzarella), 1 slice of roasted pepper (including some of the garlic), and some chiffonaded basil leaf on each crostini (the slices of toasted French bread) and place on a serving platter.
