Chicken Casserole
- 1 1/2 c. chopped green onions
- 1 c. chopped celery
- 2 Tbsp. butter
- 1 pkg. stuffing mix
- 1/2 c. butter
- 1 c. chicken broth
- 3 c. chopped chicken
- 1/2 c. mayonnaise
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 2 eggs
- 1 1/4 c. milk
- 1 can chicken soup
- Saute onions and celery in 2 tablespoons butter.
- Spread half of the stuffing mix in the bottom of an oiled baking dish.
- Heat 1/2 cup butter and broth; pour over crumbs in a large bowl.
- Mix chicken, onions, celery, mayonnaise, salt and pepper; spread over crumbs.
- Blend eggs and milk; pour over mixture.
- Cover. Refrigerate overnight.
- Remove 1 hour before baking.
- Spread remaining crumbs over casserole.
- Bake at 350u0b0 for 1 hour.
