A Menu : Middle Eastern Grilled Chicken Recipe

  1. Mix the kidney beans with the dressing and store in the refrigerator for about 1 hour.
  2. Assemble for service on lettuce leaves.
  3. Meanwhile, steam the rice mixed with a healthy pinch each of cumin seed and orange zest.
  4. Top with fresh cilantro; stir.
  5. Arrange on a plate, ring with orange slices.
  6. Garnish with more cilantro, if you like.
  7. Grill the chicken.
  8. Serve with extra sauce.
  9. NOTES : This is a treat-yourself meal.
  10. The chicken dish - all by itself has higher fat than we would like; from it's extra virgin olive oil and nuts.
  11. Roasted Peanut Butter is better than alleve for what ails me!-)
  12. I recommend the kidney bean salad for people like Bob whose idea of a salad starts with beans.
