Greek Lemon Pasta
- 12 ounces, weight Farfalle Pasta
- 1/4 cups Lemon Juice, About 2 Medium Lemons
- 1/2 cups Olive Oil
- 1 teaspoon Sugar
- 1/2 teaspoons Salt
- 1/2 cups Pitted Kalamata Olives, Cut Into Quarters
- 1/2 cups Crumbled Feta Cheese
- Black Pepper To Taste
- 2 Tablespoons Fresh Chopped Flat Leaf Parsley
- Cook pasta according to package directions, omitting the salt.
- While the pasta is cooking, whisk together the lemon juice, olive oil, sugar and salt.
- Gently fold in the olives and crumbled feta cheese.
- Drain pasta and toss with the sauce.
- Top with freshly ground pepper to taste and chopped parsley.
