Zucchini Chocolate Cake
- 1/2 c. margarine
- 1/2 c. oil
- 1 3/4 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 c. buttermilk or sour milk
- 2 1/2 c. flour
- 4 Tbsp. cocoa
- 1 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 2 c. grated, unpeeled zucchini
- 1 c. chocolate chips
- 1/2 to 1 c. nuts
- Cream margarine, oil and sugar; add eggs, vanilla and buttermilk.
- Add flour, cocoa, soda, baking powder, salt, cinnamon and cloves.
- Stir in zucchini.
- Put in 9 x 13-inch pan.
- Cover with chocolate chips and nuts.
- Sprinkle sugar over top.
- Bake at 325u0b0 for 40 to 45 minutes.
- Very moist.
- Freezes well.
