Warm Roasted Garlic Dressing

  1. Preheat oven to 400 degrees.
  2. Wrap garlic in aluminum foil.
  3. Place garlic on rack in oven, and roast until very tender, about 1 hour.
  4. Remove from oven, and let cool in foil.
  5. Cut off tops of garlic heads with a serrated knife.
  6. Squeeze garlic pulp into a small saucepan.
  7. Place over medium-low heat, and whisk in vinegar.
  8. Rewhick, if necessary before serving.
  9. Finely chop rosemary, and add to saucepan.
  10. Slowly whisk in olive oil, salt, and pepper, and turn off heat; keep dressing warm until ready to use.
